There is NOTHING better than a classic Sticky Date Pud. Oh well, maybe it is better when served with a cheeky Caramel Date Night pop.
Preheat the oven to 180C. Lightly grease a square baking dish (approx 25cm x 25cm) with vegan butter or non-stick cooking spray.
Combine chopped dates, plant based milk and vanilla into saucepan over medium heat. Cook, stirring until mixture comes to the boil and dates soften.
Add butter and sugar, stirring until melted. Remove from heat.
Sift flour, salt and cinnamon into a separate bowl. Stir in warm date mixture and mix well.
Pour into prepared baking dish. Bake for 30 minutes, or until a skewer comes out clean.
Meanwhile, make the sauce. Combine maple syrup, brown sugar and vegan butter in a saucepan over medium heat. Cook, stirring, until sauce comes to the boil. Remove from heat and stir in coconut cream.
Serve a scoop of pudding with a generous drizzle of toffee sauce and a Proud & Punch Caramel Date Night pop. Dig in!
